A wonderful recipe I was inspired to make as I was procrastinating on homework this morning! And the inspiration goes on as I continue to put off the homework in order to share it with all of you. :)
Carrot Cake Cookies
1 pkg. Carrot Cake Mix
1/3 c. Butter or Margarine, melted
1/8 c. Water
1 Egg
1/2 pkg. Miniature Chocolate Chips*
In mixing bowl, combine cake mix, egg, butter, and water. Stir until well mixed, then add the chocolate chips. Drop onto greased cookie sheets and bake at 375 degrees until done, 10-12 minutes. Makes 2 dozen.
*Now for my fellow chocolate despisers (c'mon, there's gotta be someone else out there who doesn't like chocolate. . .), the chocolate chips are optional, and can be replaced with raisins (bleck!) or nuts.
